I’m slightly obsessed with sweet potatoes. For a while we were eating them about 3 times a week. I think my husband got a little burnt out so now we have them maybe once a week. I bake them and top with butter, cinnamon and brown sugar; I slice them, sprinkle with a little chile powder and bake into fries; I dice them, add salt and pepper and cook as a side dish; or I microwave them and top with whatever I want! I eat them for an easy lunch or with dinner – I just love them!
The easiest and fastest way to make them is just in the microwave. You can cook a medium sized sweet potato in the microwave and it only takes about 8 or 9 minutes total. Even Andrew likes sweet potatoes and that kid barely eats anything. I love this “Mexican Stuffed Sweet Potatoes” recipe and thought all of you would love it as well. I’m going to list ingredients based on feeding two people so adjust as needed. Here it is:
1 medium sweet potato
1/2 pound ground turkey (I typically buy 1 whole pound and freeze half for next time)
1 packet taco seasoning
1 red bell pepper, sliced into bite sized pieces
1/2 yellow onion, sliced into bite sized pieces
1 can black beans, drained
2 avocados, sliced
1 small bag of shredded Mexican cheese
1 small container of plain greek yogurt (6 oz. and I like plain FAGE greek yogurt)
Your favorite hot sauce! We love Cholula!
-Preheat oven to 400 degrees. Dice bell pepper and onion, toss with a little olive oil, and spread onto a baking sheet. Roast in the oven for 15-20 minutes.
-While the bell pepper and onion are roasting, cook the ground turkey sprinkled with taco seasoning in a fry pan for about 15 minutes, or until no longer pink. Use as much of the taco seasoning as you want; we typically use about half of the packet.
-Wash and scrub your sweet potato and poke several times with a fork. Cook potato in the microwave for 8 to 9 minutes, flipping over halfway through cooking time. Your sweet potato is cooked and ready to eat when a fork easily pierces the potato all the way through. Once cooked, slice in half and open a little to make it easier to stuff.
**If you can handle cooking three different things at once, try microwaving the sweet potato while the veggies are in the oven and the turkey cooks on the stove.
-Place half of the sweet potato in a bowl (each person gets a half), top with cooked turkey, bell pepper and onion, black beans, sliced avocado, shredded cheese, a dollop of plain greek yogurt and a drizzle of your favorite hot sauce. Enjoy with a cold drink and a side of tortilla chips!
You can top the sweet potato with anything really. We have added salsa, corn, green onion, diced tomatoes, green chiles, and/or Spanish rice. You can also make a burrito out of all of the ingredients if you dice the sweet potato and cook with the bell pepper and onion until tender; wrap it all up in a tortilla and devour. I prefer the stuffed sweet potato though and I hope you all enjoy it as much as I do. Happy eating!
