Maple Glazed Salmon

I LOVE salmon!  The hubs loves salmon as well, which is a win-win if we both love it.  The only problem I have with it is it’s pretty darn expensive these days but we try to eat it twice a month.  It’s so good for you and makes an easy weeknight dinner.  My absolute favorite recipe is this Maple Glazed Salmon recipe.  I love maple anything but this is a knock outta the park!

-1 teaspoon paprika

-1/2 teaspoon chili powder

-1/2 teaspoon ground ancho chile powder

-1/4 teaspoon ground cumin

-1 teaspoon salt

-2 salmon filets (or more depending on size of family, just adjust the seasonings)

-2 Tablespoons pure maple syrup (the real stuff!)

-Preheat oven to 420 degrees (or BBQ the salmon, that’s fine as well).  **I like my salmon more on the done side so adjust the temperature and time depending on how you like yours cooked.

-Combine the first 5 ingredients and spread evenly over 2 salmon filets (remember:  mix up extra spices if you are making more than 2 salmon filets).

-Bake salmon for 20 minutes, or until desired degree of doneness (or BBQ).

-Once cooked for 20 minutes, take out of oven (or off of BBQ) and pour 1 Tablespoon of pure maple syrup on each salmon filet.  Cook for an additional 2 minutes.  Enjoy!

There you have it!  Serve with my “Roasted Veggies” recipe and you’re all set for a healthy weeknight dinner.  Even better, and if they fit, bake both alongside each other in the oven and you have it all done at the same time. Mmmmm, I might have to put this on my menu board for the week, so good!  Oh and don’t forget the most important part…pour yourself a nice glass of white wine to wash it down! 🙂

I hope you all enjoy it!
