Balsamic Blueberry Grilled Cheese Sandwich Recipe

I know what you’re thinking…”Balsamic and blueberries and cheese? Umm, ewwww….”

Well guess what? It’s delicious!!! This isn’t the healthiest recipe out there but it does have spinach and blueberries in it 🙂 (hehe). It’s also easy to make, which is a huge plus in my house.

I mentioned to my husband about two weeks ago that I was going to try this recipe and he said, “I’m not eating that! I’ll make a regular grilled cheese and you can eat that.” Ha! He ultimately turned his attitude around and decided to try it with me so I made two sandwiches. He loved it! So don’t shoot it down so quickly. It’s seriously awesome! I made it again tonight!

Ingredients for 2 people:

-4 slices of bread (I like to use sourdough),

-2 TBLS. butter (for buttering your bread),

-A good amount of white cheese, probably 2-3 slices per sandwich and I like Havarti cheese…so lets say 6 slices total,

-Fresh spinach (just buy a bag of pre-washed spinach and eat the remainder in a salad the next night, or in an omelet in the morning, yum!),

-1 cup fresh blueberries,

-2 TBLS. Balsamic vinegar,

-3 TBLS. brown sugar.


*Combine blueberries, vinegar and sugar in a small saucepan. Cook over medium heat and bring to a slow boil. Use a utensil to crush the blueberries as you stir (I used an avocado masher).


*Boil, stir and crush the blueberry mixture for 5 minutes. After 5 minutes, use a fine mesh strainer to separate the juice from the berry skins. The juice can be saved and used as a syrup for pancakes or to use in a cocktail! The berry skins concoction will be used like a jam for the sandwiches.

*Heat a fry pan over medium low heat and spray with a little olive oil. Butter one side of each slice of bread (the buttered side sits directly on your pan. Spread blueberry mixture on one slice of bread, top with 1 1/2 slices of cheese, a handful of spinach, and an additional 1 1/2 slices of cheese. Finally, top it all off with the other slice of bread and cook on each side for about 5 minutes per side, or until desired doneness.


*Enjoy with a side salad and impress those naysayers! Doesn’t it look amazing?! Mmmm….


**Note: Havarti cheese seems to melt the best for grilled cheese sandwiches, but any cheese you prefer will work. Tonight we used provolone and it was great, too.

I like to serve these with my favorite bagged Kale salad from Raley’s. OMG so good!
